It is typically prepared from lentils and rice mixed or cooked in milk for a creamy and flavored texture. However, the same recipes can also be extended by adding a healthy combination of fruits and fruit kheer or pazha payasam recipe is one such dessert.

Well, as I was explaining earlier kheer or rice and vermicelli-based kheer is not new to our Indian cuisine. However, adding toppings to these makes it more special and interesting. One such popular dessert recipe or payasam recipe from Chettinad or South Indian cuisine is the pazha payasam recipe. It is prepared by mixing all the tropical fruits into the prepared creamy kheer recipe. This helps to make it more flavored and creamy with the combination of sweet and sour taste. Generally, it is prepared with basic fruits like grapes, mangoes, and pomegranates, but the choice of fruits is endless for this recipe. Firstly, the fruit kheer can be made with just rice or vermicelli or a combination of both. In this recipe, I have used both. In other words, fruits can be added to any type of kheer. Secondly, the choice of fruits is critical for this recipe. Try to balance the flavor and more importantly use fresh and firm fruits which do not lose their shape while it is mixed. Lastly, on top of full cream milk, I have also added custard powder and cashew/almond paste to the kheer. Adding these makes kheer more creamy but not mandatory.

AboutPazha Payasam:

It is basically an extension of the popular milk-based kheer dessert with toppings of different fresh fruits. Pazha Payasamis a popular dessert from South Indian cuisine or particularly from Chettinad cuisine. Generally, it is prepared for various festivals and occasions, but not limited to it, and can also be an ideal choice for simple day-to-day meals. Traditionally, the fruit toppings are added just to the rice-based kheer but it can extended to any type of kheer.

As the name suggests, Mixed fruit kheer does not have any limitation to the addition of any fruits to it. As long the fruits are fresh and firm, any type or region-based fruits can be added. The combination of fruits is purely dependent on personal preference. On top of fresh fruits, it can also be topped with dry fruits to make it a crunchy and crumbly experience.

Ingredients

for soaking:

  • ½ cup basmati rice
  • 2 tbsp almonds
  • 2 tbsp cashew
  • 1 cup hot water

for kheer:

  • 6 cup milk
  • ¼ tsp saffron / kesar
  • ¼ cup semiya / vermicelli, roasted
  • 2 tbsp custard powder
  • ½ cup condensed milk

for serving:

  • black grapes
  • green grapes
  • mango
  • apple
  • banana
  • pomegranate
  • cardamom powder

Instructions

  • firstly, in a small bowl take½ cup basmati rice, 2 tbsp almonds, 2 tbsp cashew.

  • soak in 1 cup hot water or until the rice and nuts are soaked well.

  • peel the skin of badam.

  • grind to a coarse paste without adding water. keep aside.

  • in a large kadai take 6 cup of milk and ¼ tsp saffron.

  • stir and get the milk to a boil.

  • now add prepared rice and nuts paste and mix well making sure there are no lumps.

  • boil for 10 minutes, or until the rice is cooked well.

  • also, add ¼ cup semiya and boil for 5 minutes or until the semiya is cooked well.

  • further in a bowl take 2 tbsp custard powder and ½ cup milk.

  • mix well making sure there are no lumps. pour in custard milk and mix well.

  • continue to stir and cook until the milk thickens.

  • add in½ cup condensed milk and mix well adjusting the sweetness.

  • transfer the kheer to a bowl and chill completely.

  • just before serving, addblack grapes, green grapes, mango, apple, banana, pomegranate, and cardamom powder. you can add fruits of your choice.

  • mix well combining everything well.

  • for serving, you can pour the kheer into a glass. top with fresh fruits and nuts.

  • finally, enjoy Fruit Kheer or Pazha Payasam chilled.
